Day 3 of Insanity
I was supposed to do Cardio Power & Resistance today but the dvd won't work. Then I checked the rest of them and most of them don't work. Stupid me bought them from a site other than beachbody.com and I got what I paid for. I'm correcting my mistake now but in the meantime I am going to have to adjust my workouts. I did the same workout as yesterday because I didn't know what else to do but I think tomorrow I will do one of my other beachbody workouts since I have a ton of them. Something is better than nothing until I get my replacements. Today's workout was just as hard if not harder than yesterday's since I'm so dang sore. I literally have to fall on the toilet seat since bending my knees is so painful..hahaha

Sausage Lentil Soup
I've been making this recipe for years and it's my husband's favorite so I quadruple the recipe every time I make it. I HIGHLY recommend you try it.
SAUSAGE LENTIL SOUP
SAUSAGE LENTIL SOUP
Ingredients
- 1 medium onion, chopped
- 1 celery rib, chopped
- 1/4 pound reduced-fat smoked sausage, halved and thinly sliced
- 1 medium carrot, halved and thinly sliced
- 2 garlic cloves, minced
- 2 cans (14-1/2 ounces each) reduced-sodium chicken broth
- 1/3 cup water
- 1 cup dried lentils, rinsed
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 1 can (14-1/2 ounces) Hunt’s® Stewed Tomatoes, cut up
- 1 tablespoon Worcestershire sauce
- 1 cup chopped fresh spinach
Directions
- In a large saucepan coated with cooking spray, cook and stir onion and celery over medium-high heat for 2 minutes. Add the sausage, carrot and garlic; cook 2-3 minutes longer or until onion is tender.
- Stir in the broth, water, lentils, oregano, cumin and pepper. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until lentils and vegetables are tender.
- Stir in the tomatoes, Worcestershire sauce and spinach; cook until heated through and spinach is wilted. Yield: 6 servings.

Day 2 of Insanity
I'm going to be posting a lot of recipes on here b/c I feel that it is very important to eat healthy in order for you to get results. This morning I made me and my husband a shake and it's delicious!
VANILLA BERRY PROTEIN SHAKE
VANILLA BERRY PROTEIN SHAKE
1 cup milk (I used coconut)
1 scoop protein powder (I used vanilla)
1 cup frozen berries (I used blueberries)
1 tsp vanilla extract
1/2 banana (I freeze overripe ones to use for this then I don't need ice)
Ice (if your banana is fresh)
Add all ingredients to blender and add ice to thicken.
OMG, I just did the Plyometric Cardio Circuit and it wasn't easy. I could barely finish it and at the end I just had to run in place b/c there was no way I could do what he was asking and have good form..lol It's going to take a while to get adjusted to these workouts but I'm sticking with it.

1st Day of Insanity
The dang dvd for the fit test won't work and luckily someone from the beachbody.com website pointed out to me that the workouts are on the calendar....YAY! I would much rather have had the dvd to follow but things don't always go as planned so I will just deal with it. So, I just finished the fit test and man do I feel out of shape! My right shoulder which I injured is having a fit but it's not too bad. Tomorrow should be interesting since this made me out of breath and sweating..lol
Here are my day 1 stats:

Power Jacks - 34
Power Knees - 84
Power Jumps - 36
Globe Jumps - 5
Suicide Jumps - 9
Push Up Jacks - 8
Low Plank Oblique - 26
Oh yeah, weight and measurements..ugh
I did try a smoothie this morning from The Eat-Clean Diet Cookbook and it's very good. It's an oatmeal protein smoothie and the recipe will be at the end of this post. A lot of the food I've been trying is trial and error and I like to share good tasting stuff when I can since it's a misconception that anything that is good for you must taste bad. I want people to know that's not so.
OATMEAL PROTEIN SMOOTHIE
1/4 cup dry uncooked oatmeal
1 tbsp natural nut butter (I used almond)
1 scoop protein powder (I used chocolate)
1 tbsp honey or agave nectar (I used agave nectar)
1 tbsp flax seed
1 cup milk of your choice (I used chocolate almond milk)
1/2 tsp cinnamon
Ice
Put it all in the blender till smooth adding ice to adjust consistency.
